Week 4: If It’s Opposite Day Do I Still Celebrate?

JANUARY 22: Blonde Brownie Day
Blonde Brownies are pretty great and I actually had time to bake for this holiday since I didn’t work until the night, so I went on Pinterest and found this great recipe for Butterscotch Blondies:

  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1 cup flour
  • 1/2 cup butterscotch chips

    I made 3 very large pans and dropped two off at my friends’ apartment (one for them to eat and one for Parker to take to FHE) and took the other to work! I was pretty impressed by how well the recipe worked out and I definitely plan on making them again! 

    JANUARY 23: Pie Day
    I know, I know, pie day is March 14, AKA 3.14, AKA Pi Day. Well apparently January 23 is also pie day, because who can have too much pie? I like to bake pies because it feels like it’s a step up from cake and cookies, but I didn’t have time to make any pies since I was on campus all day. After class Duffy and I stopped by Target and got a chocolate cream pie and a key lime pie and took it to Jessica and Rocky’s for bachelor night. 

    JANUARY 24: Peanut Butter Day/Compliment Day
    I love peanut butter, so after work I stopped at the store and got a bunch of peanut butter snacks. I got peanut butter crackers, peanut butter balls, creamy peanut butter snack cups and a jar of crunchy peanut butter (my personal favorite). I also found some really pretty daisies on sale that I figured I could do something with for compliment day. I took all the peanut butter snacks to my guy friends’ apartment and then Brennan, Craig, Kaiti, and I went to the mall food court where I complimented random people and gave them a daisy. My favorite was some college age guy in Harry Potter pajama pants. You know I had to compliment those! 

    JANUARY 25: Opposite Day 
    I debated what I should do for Opposite Day. What is the opposite of Mandi? Should I not celebrate at all? Opposite Mandi definitely wouldn’t, but would that be breaking my resolution or keeping it? That seemed like the easy way out, and I wanted to do a bit more than nothing, so after I got home from campus I watched the Spongebob episode “Opposite Day” to get some ideas. After that I put on all my clothes inside out and backwards (do you know how hard it is to zip up your pants when they’re inside out and backwards?) pulled my hair into a ponytail on my forehead, put my shoes on the wrong feet, put a huge frown on my face, and headed over to my friends’ to show off my new getup. 

    Here’s me with all my clothes on wrong. Not a very comfortable style. 

    JANUARY 26: Green Juice Day 
    I was an opener at work that morning, so I stopped at Ivie Juice Bar on the way to the Trolley and picked up a Green Colada for breakfast. I really think they missed an opportunity not calling it Greenya Colada, but I also really like bad puns. I’m not quite sure I’m sold on the whole green juice thing and I ended up giving half of it to my coworker Drew. I think I’d prefer to drink juice without kale from now on, or just stick to Pina Coladas. 

    JANUARY 27: Chocolate Cake Day
    Duffy and I went to Smith’s and bought a chocolate bundt cake which we ate while watching chick flicks with Kayla. 

    JANUARY 28: Blueberry Pancake Day
    I don’t know about you guys, but I feel like Blueberry Pancakes are great Sunday food, so when I saw this holiday on the calendar I was pretty excited! After church my friends and I went home and made blueberry pancakes. The only problem? Apparently I’m really bad at making blueberry pancakes. Luckily Brey knows the science behind it all and saved the day with his superior pancake making skills. 

    My favorite part of this week was probably going to the mall and giving out the flowers/compliments. A lot of people probably thought I was crazy, and I definitely had to give up a few inhibitions to go up to a bunch of strangers, but the things that get you out of your comfort zone are often the most rewarding.
